ローソン、店内調理で「災害時専用おにぎり」
ローソンは8月26日、店内厨房を活用した“災害専用メニュー”のおにぎりの作成訓練を「ローソン久が原一丁目店」(東京都大田区)にて実施した。

災害専用メニューのおにぎりは、米だけのシンプルなおにぎり。店内調理「まちかど厨房」の従来のおにぎりとは異なり、海苔や具材を使用せず、塩などの味付けもしない商品。
まちかど厨房の一般的なおにぎりは、厨房にて専用の製造器で作成し、現在は約2,300店で販売している。一方、今回試験導入する災害時専用メニューのおにぎりは、まちかど厨房の導入店全店(全国約9,600店)で作成できる仕様になっている。
有事の際は、おにぎり・弁当などの製造工場の被災や道路寸断など、さまざまな要因で、店舗へ商品が配送できなくなる可能性がある。ローソンは2011年の東日本大震災の際、店内厨房を活用して商品提供を続けた経緯があり、地域からも感謝されたという。
この事をきっかけに、ローソンは厨房設備を活用した災害時の取り組みについて検討を進め、オペレーションや衛生面など、さまざまな課題が解決されたことから、災害時専用メニューの全店導入に向け作成訓練を実施するに至った。
「ローソン久が原一丁目店」で訓練を実施した後は、店舗オペレーションや店舗の客からの意見などを検証し、全国の厨房導入店での展開を目指す。
このほか、災害時の備えとして「ローリングストック」の意識が高まっていることを受け、ローソンで通常販売されている商品で始められる、1人分のローリングストックの商品を選定し、公式Webサイトなどで提案していく。
