気鋭の鮨店を、予約困難になる前に押さえておこう。
「すきやばし次郎」で幕を開けた本特集。次世代の名店紹介に「鮨 ゆうき」が登場することに、鮨好きなら思わず口元がゆるむことだろう。なぜなら店主の林ノ内勇樹は、「すきやばし次郎」から独立した「鮨 水谷」（現在は閉業）で7年間修業を重ね、江戸前の本流を汲む稀有な職人のひとりだから。 象徴的なのは“流線形”と称される握りである。見た目にも美しく端正な一貫は、指先で持ち上げても崩れない形を保ちながら、口に入れると空気をふくんだシャリがふわりとほどける。緊張感のある佇まいと軽やかな食感が同居する握りだ。米はあきたこまちを羽釜で炊き、酢には赤酢を使わず米酢を数種ブレンドした白シャリ。うまみをたたえたまぐろや、塩梅よく締められたこはだと見事な調和を見せる。 林ノ内は横浜の老舗「常磐鮨」の3代目でもあったが、東京で自らの鮨を試したいと考え、「常磐鮨」を思い切って閉業。2024年3月に広尾で「鮨 ゆうき」をオープンした。ほどなくミシュランの一つ星に輝いたように、名店の系譜を背負いながら、新天地での覚悟をたたえた鮨は一層の冴えを見せている。 ■鮨 ゆうき 住：東京都渋谷区広尾5-17-4 1F TEL：03-6277-0468 営：12:00〜（火・土・日・祝のみ）、17:00〜22:00 休：不定休 @sushi.yuuki.hiroo
