北海道 江差町で枝豆の漬物「豆漬け」の仕込み作業

北海道江差町古くから食べられている枝豆漬物、「漬け」の仕込み作業行われました。

漬け」は枝豆みょうがなどと一緒に塩で漬け込ん発酵させた江差町などの郷土料理で、農家の人たちは毎年この時期仕込み作業行っています。 23日は早朝収穫した枝豆作業場持ち込みさやを丁寧に取って大きな固めゆでていきました。 そして冷水冷ましたあと、みょうがしそ、青唐辛子を加えて塩を混ぜ込み漬け込んでいきました。

仕込みを終えた漬けは12月には食べ頃迎え地元の道の駅などで販売されるほか、江差町のふるさと納税返礼品にもなるということです。

農家の人たちで作る「えさし水土の会」の長尾和子会長は「ことしもさに負けず、いいとれました。ふるさと懐かしい味を皆さんに届けたいので、ぜひ食べてみてください」と話していました。
