山田五郎は著書『銀座のすし』で、「あらゆる地名と料理の組み合わせの中で、『銀座のすし』だけが別格なのだ」と書いた。名店が軒を連ね、日本の鮨文化を象徴する街・銀座の鮨店と聞くと、どこか緊張を強いられる場面を思い浮かべる人もいるだろう。が、「鮨 門わき」の門脇賢寿は、そんな構えをふっと和らげるような穏やかな笑顔の持ち主。所作は終始やわらかく、店内には自然とリラックスした空気が流れる。 門脇の仕事の軸にあるのは魚への探究心だ。全国各地の漁港を自ら訪ね歩き、その地で揚がる魚を確かめる。そして信頼できる鮮魚店や漁師から店に届いた魚には「冷やし込み」と呼ばれる氷温熟成の工程を施し、時間をかけてうまみを引き出していく。 一見何気ない握りを口に入れると思わずカッと目を見開くほど鮮烈なうまみに襲われるのは、それぞれの魚の個性を引き出そうとする門脇の堅実な仕事によるものだ。 銀座の鮨は敷居が高い、とよく言われる。確かに気軽に通える場所とは言い難いかもしれないが、ほんの少しの勇気とともに暖簾をくぐれば、そこには銀座の鮨文化の奥深さをやさしく教えてくれる時間が待っている。 ■鮨 門わき 住：東京都中央区銀座7丁目4-6 ACN銀座7ビルディング 6F TEL：050-5385-4750 営：17:00〜22:00（LO21:30） 休：日曜・祝日 URL：sushi-kadowaki.jp
