ポートランドのお酒にまつわる最旬スポットを巡る──トレンドのクラフトサイダーやミクソロジーを堪能できるバー＆レストラン
アメリカ・ポートランドは酒好きには楽園のような場所だ。ブリュワリーが町中に70軒以上もあり、ワインでは地元オレゴン州産ピノノワールは世界的にも高評価。年代物のウイスキーや最先端のミクソロジー、そしてトレンドのクラフトサイダーなどが体験できるバーやレストランにフィーチャーする。

ポートランドから世界的なムーブメントとなるかも!?と熱い視線が注がれているのがりんごの発泡酒「クラフトサイダー」だ。フランスの甘いタイプのシードルとは異なり、ドライで食中酒にも合うのが特徴（ハードサイダーとも呼ばれる）。オレゴン州はりんごの産地で、2010年代からクラフトサイダーの生産者が増加の傾向にあり、全米でも有数の高品質なクラフトサイダーが飲める街。今世界が注目しているのが、2016年創立の醸造所「Bauman’s Cider（バウマンズ・サイダー）」だ。
元はホリステック・クリニックを経営していたクリスティン・ウォルターが、バーでグルテンフリーのお酒を頼んだところ、クラフトサイダーを薦められ、その魅力にはまったのは2014年のこと。
「りんごを発酵させただけの透明感のあるナチュラルなおいしさに魅了されて。ドライで飲み疲れしないのもいい」とクリスティン。醸造の講習を受け、実家の果樹農家で50種以上のりんごを育て、さまざまな種類のクラフトサイダーを生産。彼女が造るサイダーの特徴は上品な口当たりと、ほどよい酸味、ピュアで奥深い味わいだ。スルスル飲めるものが多く、料理を選ばず何にでも合う。農場で育てているいちごやラズベリー、ぶどう、桃などを副材料として加えたり、ホップを足して苦みを強めたり、ワイン樽やウイスキー樽で熟成させたりと味のバリエーションもさまざまで、ナチュラルワインのペティアン（微発泡のワイン）のようなニュアンスがあるものも。
欧州産のものと比べると、副材料を使うバリエーションの多さ、自由度の高さはオレゴン州産のクラフトサイダーの特徴ともいえる。創立して数年で、全米のサイダーに関わるアワードで数々の賞を総なめにし、サイダー界のオスカーと呼ばれる国際的なアワード「International Brewing & Cider Awards 2024」で金メダルを受賞。昨年新しくオープンした醸造所に併設されたタップルーム＆レストランで、絶品ピッツァと一緒に出来立てクラフトサイダーを味わいたい。
