いま空前の鮨ブームの中、海外で鮨を握れば、成功への道は十分に開かれている。日本人の職人であれば、なおイージーだろう。だが、大矢庸二はあえてその逆を選んだ。海外で生まれ育ちながら、本場の鮨の世界で腕を試すため、日本へ渡ったのである。 アメリカ・シカゴ生まれ。幼少期はタイで過ごし、高校時代はロサンゼルスへ。海外での生活が長かった大矢は、外から日本を見ることで、鮨という文化の奥深さに強く惹かれたという。大学卒業後、名店「鮨よしたけ」で研鑽を重ね、神楽坂「鮨 大矢」として独立。いわゆる“SUSHI”ではなく“鮨”の世界で勝負する道を選んだ。 もっとも、海外で培った感覚は随所にさりげなく現れる。穴子のツメにはイタリアの薬草酒フェルネット ブランカをほんのわずかに忍ばせ、いかの煮切りには白樺の樹液を合わせる。いずれも江戸前の仕事の延長線上にある工夫だが、味わいにふっと新しい輪郭や陰影を与えてくれるのが面白い。大矢の試みは鮨の本質を忘れることなく、その愉しみを少しだけ拡げていくものだ。伝統の技を土台にしながら、可能性にそっと新しい光を当てているのである。 ■鮨 大矢 住：東京都新宿区袋町3-6 神楽坂センタービル ANNEX 3F TEL：03-6228-1868 営：18:00〜23:00 休：日曜・祝日 URL：www.instagram.com/sushioya
