アサヒ、酵母由来の非動物性ミルク「LIKE MILK」 日本初
アサヒグループジャパンは、酵母からできた非動物性ミルク「LIKE MILK(ライクミルク)」を日本で初めて開発。Makuakeで4月16日から6月15日まで販売する。価格は200ml×12本で3,000円など。2026年からの全国発売を予定している。

アサヒグループ独自の酵母技術を活用した、酵母を由来とした非動物性のミルク。アレルギーなどの体質やエシカルなどの思想、非動物性志向・ヘルシー志向などの嗜好を問わず、誰もが自由に食を楽しめる社会“フードダイバーシティ”の実現を目指し、開発した。
アレルギー特定原材料等(28品目)不使用で、ほんのりとした自然な甘み、癖のないまろやかな味わいを特徴としている。
牛乳や豆乳に比べて食物繊維、亜鉛を豊富に含み、牛乳と同程度のタンパク質やカルシウムを摂取できる。また、牛乳と比較して脂質は38%低減されている。
そのまま飲用するほか、料理やお菓子作り、コーヒーや紅茶などに混ぜるなど、牛乳と同じように活用できるとしている。
容器は紙パックで、容量は200ml。25年内に1,000mlをテスト発売予定。品目は酵母飲料。賞味期限は6カ月(常温保存可/開封後は要冷蔵)。
LIKE MILKという商品名は、日常生活のあらゆるシーンで牛乳と同じように使える「まるでミルクのような(LIKE)」と、おいしいと自然に感じて「好き(LIKE)」になってもらいたいという願いを表現している。
アサヒグループでは、23年7月にグループ横断の新価値創造の取り組みに関するプログラムが始動。日本事業を統括するアサヒグループジャパン、日本で食品事業を展開するアサヒグループ食品、アサヒグループの基盤研究を担うアサヒクオリティー&イノベーションズの3社から構成されたチームを発足した。
チームでは、世の中の社会的課題を考えていく中で「食物アレルギー」に着目し、食物アレルギーに悩む人へのインタビューを実施。乳と卵の食物アレルギーの子供を持つ家族は、多くの制限の中で生活をしていることが分かった。
また、食物アレルギーを持つ人が増加傾向にあることも踏まえ、商品開発に着手。アサヒグループが長年研究を続ける酵母に着目し、酵母素材の持つ乳化力を向上させる技術や酵母独特の風味を除去する技術を確立したことで、アレルギー特定原材料等(28品目)不使用のLIKE MILKが完成した。
