ウナギは一般的な養殖方法では成長するとほとんどがオスになりますが、愛知県の養殖場ではエサを工夫することでオスより皮や身が柔らかいメスに成長させる技術を導入していて、このメスのウナギの出荷が最盛期を迎えています。

ウナギは育つ環境によって性別が分かれる生き物で、一般的な養殖では9割以上がオスになるとされます。

オスは大きくなると皮や身が硬くなるため、愛知県高浜市の養殖場では県の水産試験場などが開発した技術を使ってメスに育てていて、今月26日の土用の丑の日を前に出荷の最盛期を迎えています。

22日の朝も養殖池から250グラムほどに育ったメスのウナギを取り出し、氷水で冷やして出荷する作業が行われていました。

この技術は「大豆イソフラボン」が含まれるエサを赤ちゃんの段階から与えるもので95％以上がメスに成長するということです。

メスのウナギは成長の速度は緩やかなものの、オスの2倍の大きさになっても皮や身が柔らかいままだということで、愛知県や静岡県の養殖場では数年前からこの技術が広く使われているということです。

また絶滅のおそれが指摘されるニホンウナギを有効に活用する技術としても注目されています。

養鰻業者糟谷禎さん「ことしは天候が不安定で養殖は難しかったが、無事にメスのウナギを丑の日に向けて出荷できほっとしています。資源の保護にもつながるメスのウナギを是非味わってほしい」
