東大前「ビストロジョンジ」──洗練されたエスニック料理がやってきた。特集「東京グルメトレンド」
アジアや中南米などの民族文化に由来する“エスニック”。フレンチや和食の技法を使い、エシカルやサステナブルの視点を取り入れることで進化を続けている。東大前にある韓国料理、「ビストロジョンジ」に注目だ。

ドラマの影響だろうか。ひと昔前は焼肉とサムギョプサルくらいしか知らなかったという人も韓国の料理にずいぶん明るくなった。しかし、かなりの韓国通を自任する人でも、ここ「ビストロジョンジ」の料理には驚くに違いない。まず、赤くない、辛くない、そして最近のトレンドであるチーズがのっていないのだから。
オーナーシェフのキム・スジンがつくる“韓国料理”は、宮廷料理と家庭料理をベースに、ときにフレンチのアプローチを取り入れた言わばモダン・コリアン。しかも食材はできるかぎりオーガニックで、キムチなどの漬物はもちろん、醤油やコチュジャンなどの調味料もほぼ手づくり。なんと粗塩まで一度水で洗ってから使うという念の入れようだ。
そんなスジンの料理は、ひと言で表すなら“清澄”。どこにも雑味がなく、すべての食材の持ち味がクリアに発揮されながらも混じり合い、さらなる高みへと連れていってくれる。洗練と、精緻な素朴さを併せ持つ稀有な韓国料理だ。
店内はカウンター5席とテーブル2卓とかなり小体なつくりだが、まずはカウンターをおすすめしたい。ワンオペで料理をつくるスジンの手元を眺めつつ、「次はどんな料理を味わえるのだろう」とワクワクするのは、ここでしか味わえない極上の愉しみだからだ。お供には自然派ワイン、または彼女が最近お気に入りだというクラフトマッコリをどうぞ。
