気鋭の鮨店を、予約困難になる前に押さえておこう。
カウンターの上の紺色の内のれんが店主の出自を物語る。名店「すきやばし次郎」での11年に及ぶ修業を終えた川口雄大が自らの店を構える地として選んだのは、江戸の昔から食文化の中心であった日本橋の一角だった。 「“江戸”にこだわりたい」という川口の想いは小野二郎・禎一父子仕込みの伝統的な江戸前の鮨はもちろんのこと、江戸の文献や資料に学ぶつまみ、そして東京近郊産にこだわった酒のラインナップまで、多岐にわたる。川口自身も東京の出身で、これもまた立派な江戸前と言えるのかもしれない。もっとも彼自身は米国の大学に学び、遠距離恋愛を経て英国出身の妻を迎えた国際派でもある。 いま東京では若い世代の鮨職人が次々に独立し、新しい店が生まれている。革新を掲げる店も少なくないなか、川口が選んだのはむしろ王道の道筋。江戸の中心地で江戸前の型をまっすぐに受け継ぐその姿勢は、鮨好きの間で静かな評判を呼び、2025年3月の開業からほどなく、予約の取りにくい人気店へと成長した。そのカウンターには、江戸前の鮨が次の時代へと受け継がれていく気配が濃厚に漂っている。 ■日本橋 川口 住：東京都中央区日本橋本町4-5-13 VORT日本橋本銀通りビル 1F TEL：03-6910-8805 営：12:30〜、18:30〜 休：日・月曜 URL：www.nihonbashi-kawaguchi.com
