山形 鶴岡 ラムサール条約に登録の池でレンコンの収穫始まる
国際的に重要な湿地の保全を定めたラムサール条約に登録されている山形県鶴岡市の池で、レンコンの収穫が始まっています。
鶴岡市郊外の農業用のため池、大山上池と大山下池はラムサール条約に登録されていて、毎年8月にはハスの花が咲くことで知られています。
このハスの根は刀のように細い形から「サムライレンコン」と呼ばれ、一般的なレンコンよりも柔らかく、サクサクとした食感が特徴で、9月中旬ごろから収穫の時期を迎えています。
29日は地元の農家が先端にかぎ爪がついた長い棒を使って深さ2メートルほどの池の底からレンコンを掘り起こしていました。
ことしは夏の雨が少なかったため、池の水位が例年より低くなり、ハスの生育に適した環境となったことから去年の倍以上の量を収穫できているということです。
大山浮草組合の田中富雄組合長は「太い部分は天ぷらに、細い部分はきんぴらにするとおいしいので、楽しんでもらいたい」と話していました。
